The Gingerbread Man Loose at Christmas by Laura Murray illustrated by Mike Lowery

The Gingerbread Man lives in a classroom.  With the students, he creates a Christmas card and goes with them throughout the town to spread Christmas cheer.  The class returns to the school but the Gingerbread Man has one more card to deliver.  In the process, his cookie feet begin to crumble and turn into mush.  Who can fix his predicament?
Story is told in rhyme.
